Our Grass-Fed Meats

All our animals enjoy a high quality, low stress life in an eco-friendly environment. We raise American Blackbelly sheep, a slower growing hair sheep prized for their sweet, tender meat. We also raise Scotch Highland cattle, an even-tempered, smaller breed of cattle well suited to being pasture-fed. Highlands produce lean, well marbled cuts of beef that are naturally lower in cholesterol.

Why Grass-Fed Meat?

Cooking with Grass-Fed Meat
Because of its lower fat content grass-fed meat should be cooked slower and at a lower temperature than that used for grain fed meat. Otherwise, it will tend to be tough. Low and slow will preserve the inherent tenderness and flavor of grass-fed meat.

Originally from Scotland. They are a smaller cow that finishes well on grass.
